Easy Low Carb Pork Tapa Recipe

Tapsilog is a term used to call a regular breakfast meal in a Filipino family’s table. It is a combination of Tapa (beef or pork jerky), Sinangag (fried rice), and Itlog (egg). I love Tapsilog. But because I’m on a low carb diet, I don’t eat fried rice anymore. Sad life? Nope! My favorite part of Tapsilog is the Tapa. And that is what you can definitely enjoy while on a ketogenic diet.

Marinade
  1. Cut the pork tenderloin into strips. In a bowl, mix everything together and let it sit for about 30 minutes to let the pork soak all the flavors before cooking. The longer you marinade this mixture, the more flavorful the meat will become.
Cooking
  1. Heat the pan and add in the coconut oil. Once the oil is hot, stir-fry your pork tapa mix. This will only take about 5-8 minutes. Serve it with fried eggs and voila, you now have a low carb high-protein meal!
